The challenge was to invest in food processing equipment that could elevate product quality, accommodate diverse recipes, and handle larger volumes. Beerenberg’s product range, which spans from many different variants demanded flexibility in their production process.

The Solution

To address Beerenberg’s production needs, DC Norris introduced two 1000-litre Steam Jacketed Kettles with customised features:

Split Steam Jacket: Enabled cooking of both large and small batches without burn-on.

Tracked and Guarded Tote Bin Hoists: Reduced manual handling and enhanced operator safety.

Internal and External Homogenisers: Allowed for fine purees and re-circulation options.

Wash In Place (Mild CIP): Facilitated product rinsing and detergent washing for sanitisation. Wash in Place: The kettles have streamlined the cleaning process, ensuring hygiene and reducing downtime.

Full Recipe Manager Software: Enhanced control over the cooking process, including timings, batch temperatures, and weights.

Training and Support

DC Norris provided comprehensive training to Beerenberg’s team, ensuring they could optimise the use of the kettle systems.  On-going support and maintenance continue to be offered, ensuring uninterrupted production.

Results and Benefits

The DCN Kettle Systems at Beerenberg have transformed their production processes, the initial two kettles were projected to serve Beerenberg for a decade. However, due to the company’s success and rapid expansion, they recently added two more 1000-litre kettles. The results have been outstanding:

Burns Night: DC Norris Haggis Production

To celebrate the recent Scottish tradition of Burns night we wanted to share our recent Haggis process training trial with one of our customers in Scotland last week.

The cherished Scottish dish is a savoury pudding containing sheep’s pluck (heart, liver, and lungs), minced with onion, oatmeal, suet and spices and is cooked traditionally encased in the animal’s stomach though now an artificial casing is used.

Haggis has long been associated with slow cooking of offal in large batches however, using our cutting-edge technology, we’ve not only significantly reduced processing time but also enhanced the overall quality of the product.

 The Challenge: Slow Cooking and Frozen Offal

The traditional method of preparing Haggis involves slow boiling to ensure thorough cooking of the sheep’s pluck.  Due to high demand during festive seasons, frozen offal is often used, further extending the cooking time. The challenge lies in avoiding burn-on and maintaining the authentic flavour.

Our Solution: DCN Jet Cook System

Working closely with our customer, who currently use four of our Jet Cook systems, we devised a solution. By leveraging our In-Tank Jet Cooks and a multi-directional agitator, we achieved a 50% reduction in processing time. What used to take 90 minutes for a 500kg batch of Haggis now takes less than 45 minutes, all while using frozen offal.

Efficiency and Energy Conservation

One of the benefits of our Jet Cook system is the significant reduction in energy consumption—approximately 50%. Our technology not only speeds up the cooking process but does so in an energy-efficient manner, aligning with sustainability goals.

Preserving Nutritional Value

Beyond efficiency gains, our system ensures the preservation of essential vitamins and proteins. When using traditional cooking methods, you risk protein denaturation due to contact with hot surfaces.  However, the rapid heating method of the Jet Cook from the centre of the vessel prevents denaturation of muscle proteins and maintains the required temperature without compromising nutritional integrity.

Conclusion: Transforming Tradition with Technology

Using DC Norris’ 50+ years of product and process knowledge, we were able to collaborate with our customer and up-date their technology and processes – making them not only faster but also more sustainable and nutritionally beneficial.

DC Norris aquires Lancashire metal fabrication firm GILWOOD

Gilwood (Fabricators) Company, a Lancashire-based manufacturing business, has been acquired out of administration by DC Norris and Company in a pre-pack deal. Gilwood, which is based in Heywood, is a family-owned metal fabrication firm that specialises in manufacturing static process plant equipment and pressure vessels.

The company’s products are used across a wide array of sectors, including food and drink, oil and gas, nuclear and petrochemicals. However, the company encountered financial difficulties as a result of global economic uncertainty, with administrators saying that rising material costs and interest rates had impacted new orders.

Gareth Harris and Chris Ratten of RSM UK Restructuring Advisory LLP were appointed joint administrators of the company on November 1. The administrators subsequently completed a sale of the business and its assets to DC Norris and Company, with all of the company’s 26 employees to be offered jobs at a newly formed entity, Gilwood Limited, that will be part of the DC Norris group.

Joint administrator and RSM UK Restructuring partner Chris Ratten commented: “Gilwood is an established fabrication company in the North-West, and it is unfortunate that it has suffered over the last few months as a result of a delay and postponement of orders. Much of this is down to the economic uncertainty faced in the global markets by its customers and the decline in capital investment in projects due to rising interest rates and costs of materials.”

Ratten continued: “Given the ongoing economic challenges, we are pleased to have helped save the future of the company and support the regeneration of its existing pipeline. Securing its sale to DC Norris will protect all its skilled workforce for many years to come and allow Gilwood to continue operating in the market.”

DC Norris owner David Norris said: “We were very sorry to see the demise of the well-respected family business Gilwood (Fabricators) Company Limited. Working with RSM, DC Norris has acquired the business as well as the assets from the administrator, and will also offer all the employees new jobs in a newly formed addition to the DC Norris group called Gilwood Ltd.”

Norris added that Gilwood Ltd “will have our full commitment and support to maintain their high standards of quality and service going forward”, which will include investment in new equipment in order to improve efficiency.
