Burns Night: DC Norris Haggis Production

To celebrate the recent Scottish tradition of Burns night we wanted to share our recent Haggis process training trial with one of our customers in Scotland last week.

The cherished Scottish dish is a savoury pudding containing sheep’s pluck (heart, liver, and lungs), minced with onion, oatmeal, suet and spices and is cooked traditionally encased in the animal’s stomach though now an artificial casing is used.

Haggis has long been associated with slow cooking of offal in large batches however, using our cutting-edge technology, we’ve not only significantly reduced processing time but also enhanced the overall quality of the product.

 The Challenge: Slow Cooking and Frozen Offal

The traditional method of preparing Haggis involves slow boiling to ensure thorough cooking of the sheep’s pluck.  Due to high demand during festive seasons, frozen offal is often used, further extending the cooking time. The challenge lies in avoiding burn-on and maintaining the authentic flavour.

Our Solution: DCN Jet Cook System

Working closely with our customer, who currently use four of our Jet Cook systems, we devised a solution. By leveraging our In-Tank Jet Cooks and a multi-directional agitator, we achieved a 50% reduction in processing time. What used to take 90 minutes for a 500kg batch of Haggis now takes less than 45 minutes, all while using frozen offal.

Efficiency and Energy Conservation

One of the benefits of our Jet Cook system is the significant reduction in energy consumption—approximately 50%. Our technology not only speeds up the cooking process but does so in an energy-efficient manner, aligning with sustainability goals.

Preserving Nutritional Value

Beyond efficiency gains, our system ensures the preservation of essential vitamins and proteins. When using traditional cooking methods, you risk protein denaturation due to contact with hot surfaces.  However, the rapid heating method of the Jet Cook from the centre of the vessel prevents denaturation of muscle proteins and maintains the required temperature without compromising nutritional integrity.

Conclusion: Transforming Tradition with Technology

Using DC Norris’ 50+ years of product and process knowledge, we were able to collaborate with our customer and up-date their technology and processes – making them not only faster but also more sustainable and nutritionally beneficial.

DC Norris aquires Lancashire metal fabrication firm GILWOOD

Gilwood (Fabricators) Company, a Lancashire-based manufacturing business, has been acquired out of administration by DC Norris and Company in a pre-pack deal. Gilwood, which is based in Heywood, is a family-owned metal fabrication firm that specialises in manufacturing static process plant equipment and pressure vessels.

The company’s products are used across a wide array of sectors, including food and drink, oil and gas, nuclear and petrochemicals. However, the company encountered financial difficulties as a result of global economic uncertainty, with administrators saying that rising material costs and interest rates had impacted new orders.

Gareth Harris and Chris Ratten of RSM UK Restructuring Advisory LLP were appointed joint administrators of the company on November 1. The administrators subsequently completed a sale of the business and its assets to DC Norris and Company, with all of the company’s 26 employees to be offered jobs at a newly formed entity, Gilwood Limited, that will be part of the DC Norris group.

Joint administrator and RSM UK Restructuring partner Chris Ratten commented: “Gilwood is an established fabrication company in the North-West, and it is unfortunate that it has suffered over the last few months as a result of a delay and postponement of orders. Much of this is down to the economic uncertainty faced in the global markets by its customers and the decline in capital investment in projects due to rising interest rates and costs of materials.”

Ratten continued: “Given the ongoing economic challenges, we are pleased to have helped save the future of the company and support the regeneration of its existing pipeline. Securing its sale to DC Norris will protect all its skilled workforce for many years to come and allow Gilwood to continue operating in the market.”

DC Norris owner David Norris said: “We were very sorry to see the demise of the well-respected family business Gilwood (Fabricators) Company Limited. Working with RSM, DC Norris has acquired the business as well as the assets from the administrator, and will also offer all the employees new jobs in a newly formed addition to the DC Norris group called Gilwood Ltd.”

Norris added that Gilwood Ltd “will have our full commitment and support to maintain their high standards of quality and service going forward”, which will include investment in new equipment in order to improve efficiency.

Challenges:

Producing products like Sweet Chilli Sauce can be intricate due to its high sugar content, low water activity, and viscosity. The high sugar concentration can lead to burn-on during both production and discharge. Additionally, the limited free water in the recipe can result in viscosity issues in the finished product, as the starch competes with the sugar for water. Another challenge arises when emptying the vessel, as the product can leave a thin layer, leading to burn-on due to the latent heat in the jacket.

Innovations by DC Norris:

To address these challenges, we conducted trials in our Product Development Kitchen. We successfully produced a 1000 kg batch of Sweet Chilli Sauce in just 30 minutes, maintaining perfect particulate integrity and a well-rounded flavour. Following this triumph, we installed 2 x 2500lts DCN Jet Cook Systems in the UK. Our innovative approach ensures that we can produce challenging products efficiently while maintaining the highest quality standards.

5. Desserts & Preserves

At DC Norris, we’ve mastered the art and science of crafting delectable desserts and preserves. Our commitment to quality and precision ensures that these products not only taste delightful but also maintain their consistency and texture, making them a favourite among consumers.

These systems excel in producing dessert products such as crème patissiere and custards, ensuring no burn-on and minimal cleaning time. For instance, while traditional jacketed vessels take approximately 50-65 minutes to produce 1000 kgs of dairy custard, our Jet Cook™ system reduces this time to approximately 25 minutes. This rapid heating and simultaneous homogenising result in a creamier mouthfeel due to smaller fat/dairy droplet sizes. For jams, we employ a combination of Jet Cook™ and Vapour Reduction technologies, ensuring excellent fruit definition and no flavour taints from burn-on contamination. This approach is also applied to savoury onion marmalades, chutneys, and marinades.

Producing desserts and preserves requires meticulous attention to detail. Achieving the right consistency in custards, ensuring fruit integrity in jams, and avoiding flavour taints are just a few of the challenges we navigate daily. Our machinery and innovative approaches are designed to address these challenges head-on, ensuring optimal results every time.

We’ve introduced a range of accessories, including in-vessel homogenisers and automated ingredient additions, to enhance our production capabilities. Our popular DC Norris Recipe Manager offers RFID tagging for real-time data logging and operator/ingredient traceability. Traditional wet pet food processing often involves multiple jacketed or pressure vessels, emulsifiers, heat exchangers, and retorts to achieve high-temperature sterilisation. These systems not only occupy a large footprint but also demand regular maintenance and yearly pressure testing. Moreover, they consume vast amounts of energy, water, and caustic solutions for cleaning and burn-on removal.

Our high-speed Jet Entrainment system is adept at handling powders such as gums, gels, vitamins, and hydrocolloids, ensuring rapid heating, mixing, and hydration. Client Overview:  Our valued customer is a prominent player in the food production industry. DCN’s dedicated Jet Cook product and process team visited for a two day product and process immersion at their site in Poland.

Objective:  To optimise their culinary processes using the DCN Jet Cook system and our innovative Braising Bar. This article delves into the transformative journey of elevating soup and Thai food quality through innovative technology and culinary expertise.

Challenge:  Our client faced the challenge of enhancing the flavour profile and efficiency of their soup and Thai food production processes. They sought to elevate the taste and texture experience of their offerings, whilst improving production speed and resource utilisation.

Solution – Jet Cook and Braising Bar Integration:  Our team implemented a comprehensive solution integrating the Jet Cook system and the revolutionary Braising Bar. The key components included:

Braising Bar Application:  The Braising Bar played a pivotal role in the process.  It enabled the searing and sweating of onions and vegetables before cooking, significantly enhancing the flavour profile of the soup base.  This step was a departure from conventional boiling methods.
Flavour Chemistry Unleashed:  We explored the science behind flavour chemistry.  We focused on vegetables with their rich aromatic molecules nestled within watery cells.  When subjected to the controlled heat and agitation of the Braising Bar, the cells ruptured releasing aromatic compounds.  The resulting flavour compounds merged to create entirely new and enticing taste experiences.
Thai Cuisine Mastery:  Our experts emphasised the significance of unlocking flavours at the outset of Thai cuisine preparation.  Cooking spices and onions in the early stages was highlighted as crucial. This foundational step paved the way for the vibrant and captivating flavours and crunchy textures that characterise Thai dishes.
Jet Cook Technology:  After flavour extraction, our Jet Cook Technology took the reins. The rapid cooking and heating maintained ingredient integrity and texture, a marked improvement over traditional steam jacket cooking methods.

The time required to heat 900 kgs of liquid to 92°C was reduced from 45 minutes to 15 minutes, resulting in significant energy savings.
